How to make delicious chicken wraps - Writing Wednesday

Hello everybody and welcome back to another blog post, 

Here is the official recipe for the chicken wraps that me and my sister made on Saturday night. I hope you enjoy!

Prep time: 2 hours

Servings: 4 hungry people! πŸ˜‚πŸ’œ

Ingredients for the seasoned chicken:

  • 2 packets of six chicken thighs.
  • 1 tbsp of Oregano, 1 tbsp of hot Paprika, 1 tbsp of chilli flakes, 1 tbsp of ground Cumin, 1 tsp of pepper, and 1 tsp of salt.
  • 1 onion.
  • 3 cloves of garlic.
  • Vegetable oil on hand.
  • 1 tin of chopped tomatoes.
Method for the seasoned chicken:
  1. Place your Oregano, Paprika, chilli flakes, ground Cumin, pepper, and salt into a small cup and mix together.
  2. Remove your chicken from the packet and place on the chopping board. Use a sharp knife to cut the majority of the chicken flesh away from the bone, leaving some of the meat on the bone for flavour during the cooking.
  3. In a large plastic bowl, add your seasonings to your chicken and mix well using your hands. Your chicken should be generously covered in seasoning. Make sure to clean your hands well afterwards with hot water and soap to prevent food contamination.
  4. On a separate chopping board, peel and finely dice your onion and garlic.
  5. In a large cooking pot over a medium heat, add a dash of vegetable oil and your onion. Mix the onion with a wooden spoon until it is caramelised. Carefully add in your chicken and cook until it begins to brown on the bottom. If a lot of fat collects at the bottom of the pan, take a metal spoon and spoon some of it out into a cup. 
  6. Once your chicken is cooked, add in your garlic and open a tin of tomatoes and add that into the pot as well. Fill up half the can of tomatoes with water and pour it over your chicken.
  7. Turn the heat down to a minimum and place a lid over your pot. Let it simmer and reduce whilst you're making everything else. Taste test later on to see if it is well seasoned.
Ingredients for tortilla wraps:


To make 16 large tortillas you will need:
  • 125g of sourdough starter (if available, if not, use the ingredients below and just miss out the sourdough)
  • 350g of plain flour.
  • A pinch of salt.
  • 1 tsp of baking powder.
  • 85g of room temperature water.
Method for the tortilla wraps:
  1. Mix your dry ingredients (flour, salt and baking powder) into a plastic bowl using a whisk.
  2. Add in your room temperature water and sourdough starter (if available) and gently incorporate the mixture using your hands.
  3. Tear off roughly equal sized chunks of dough from the main piece.
  4. Take one of the small balls of dough and place it onto a lightly floured surface. Use a wooden rolling pin to roll out the dough into a circle. Roll once in one direction then rotate the dough and roll again to create a uniform circle. Roll until it is thin but can still hold it's shape when lifted.
  5. Onto a hot, flat cast iron pan, place your dough. Flip the dough and cook until it is lightly brown on both sides. If it's done correctly, the dough should puff up when it is placed on the heat. If it isn't,  you need to roll your dough out a bit thinner.
  6. Place a cover over your tortillas or place them in an oven with residual heat to keep them fresh until they are ready to use.
Ingredients for the guacamole:
  • 2 ripe avocados.
  • 1 tsp of salt.
  • 1 tsp of pepper.
  • The juice of 1 lime.
Method for the guacamole:
  1. Using a chopping board and a sharp knife, cut up both of your avocado's and remove the seed from both avocado's. 
  2. Place your avocados in a food processor and blitz until smooth. If you don't have a food processor, you can just mash your avocados in a bowl with a fork.
  3. Add your salt and pepper into the guacamole. Cut your lime in half and squeeze both halfs into the mixture. Hold your hand underneath the lime to catch any pips.
  4. Blitz or mix for the final time and taste test to see if it is well seasoned.
How to assemble your delicious chicken wrap!

Place one delicious tortilla onto your plate and spread a generous layer of guacamole. Add a couple spoonfuls of the chicken mixture onto your wrap and fold it up. It might be a little messy to eat but remember, the messiest food to eat is always the most tasty! πŸŒ―πŸ’œ
